SINGAPORE Prawn Noodle Soup & Prawn Noodles w/ Chilli Recipe 虾面汤 虾面干 Chinese Noodles Recipe

This prawn noodles are Roland's favourite. We always have this at least once every 2 months because he's always craving for it. Our recipe is very different from what you get outside at the prawn noodle stall in Singapore because we included five spice into the recipe. I think this is better than what we get out because the soup is full of body and the five spice adds a very different twist to the dish.

Ingredients
Serves 10

Ingredients for prawn broth
-------------------------
1.2 kg chicken feet or pork ribs
1kg prawn head
3 bulbs of garlic
20g rock sugar
3 pieces cinnamon bark
2 pieces star anise
6 - 7 pieces clove
1 tablespoon white peppercorn
2 teaspoons salt

Ingredients with noodles
-------------------------
20 pieces of prawns
300g sliced marinated pork
3 packets of yellow noodles
300g fish cake
any vegetables you like

Marinate for Sliced Pork
-------------------------
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoon cornstarch powder

Dry noodles base mix (for 1 noodle portion)
-------------------------
2 teaspoons of basic noodle mix (fry 1 tablespoon sesame seed oil, 4 tablespoons oyster sauce and 1 teaspoon of sugar together)
1 - 1.5 teaspoons of sambal chilli paste
1 - 2 teaspoons pork lard oil
